Apple N’oatmeal

A warm and comforting breakfast (or dessert), perfect on chilly days.

First thing's first. If you’ve never had n’oatmeal before, this is the best way that I can describe it - it's basically oatmeal made without oats.


Now I love oats - and by love, I mean basically obsessed. I eat oats in one form or another for breakfast every day. Call me crazy or call me boring, but I mean, I don't think you can go wrong. Warm meals are so comforting on chilly mornings (or afternoons).


However, occasionally I like to take a break; and I thought maybe I could do something with apples instead of oats for breakfast. We've all heard of baked apples with sugar and coconut on top as a dessert. So I thought "could I do something like this for breakfast?" Well, here is the result.

It's SO easy to make a big bowl of n’oatmeal, and I love experimenting with different flavor combinations. You can try banana nut n’oatmeal (add some sliced bananas and walnuts) or cinnamon raisin n’oatmeal (add some raisins). As you can see, there are a ton of ways to personalize this breakfast. Here are some ideas and subs:


Nuts and seeds: sliced almonds, chopped walnuts, sunflower seeds pumpkin seeds, macadamia nuts or pecans.

Nut or seed butter: Almond butter, cashew butter, pumpkin butter, sunflower seed butter and or peanut butter.

Milk: Use your favorite milk you like or have on hand like almond milk, coconut milk or cashew milk.

Chocolate: Cacao nibs or chocolate chips.


My favorite part about eating this n’oatmeal is that there’s really no need for extra sweetener. The natural sweetness from the apple and the nut milk is enough. You can always add a little maple syrup for something more dessert-like.


And yes, warm cereal is a perfectly acceptable dessert… or snack.


There's no right or wrong way to make these so get creative!

APPLE N'OATMEAL

Serves 1

INGREDIENTS

  1. 1 apple, peeled and chopped

  2. ¼ cup pecans, finely chopped

  3. ¼ cup shredded coconut

  4. 1 Tbsp coconut flour

  5. 1 cup nut milk

  6. 1 tsp chia seeds

  7. ¼ tsp nutmeg

  8. 1/2 tsp cinnamon

  9. Stevia, to taste (optional)

  10. Peanut butter, for drizzling

INSTRUCTIONS

  1. Add the pecans, shredded coconut and coconut flour to a medium saucepan and stir-fry for 3-4 minutes, or until toasted.

  2. Ddd the milk, chopped apples, chia seeds, nutmeg and cinnamon and cook for 5 minutes, stirring occasionally.

  3. If you like it sweet, add sweetener. Place in a bowl and drizzle with peanut butter.

Serve and enjoy!
