Can you really put peanut butter on everything? I think so.
This breakfast combines a few of my favourite things. Sweet potatoes, chocolate and of course - PEANUT BUTTER.
Peanut butter is the best food group.
This dish is sweet and filling. The chocolate and banana really add to the sweetness of the potato, but because it's all natural, the sweetness isn't over the top.
Sweet potatoes great to have in your diet for several reasons; they have antioxidants, they're anti-inflammatory, and can help in the regulation of blood sugar.
They also are a great source of beta-carotene; but in order to help your body absorb it, it's recommended to include some fat. Some research has shown that a minimum of 3-5 grams of fat per meal significantly increases the uptake of beta-carotene from sweet potatoes. Which is also - of course - another excuse to include some peanut butter.
CHOCOLATE PB BREAKFAST SWEET POTATOES
Serves 1
INGREDIENTS
1 medium sweet potato
1 banana, sliced
pinch of sea salt
2 tablespoons peanut butter for topping
Dark chocolate squares
EXTRAS/TOPPINGS
Cacao nibs
Coconut flakes
Crushed almonds
INSTRUCTIONS
Preheat the oven to 425.
Cut the sweet potato in half and place face down on a baking sheet lined with parchment paper.
Bake for 20-30 minutes (until caramel-y). Remove from oven and let cool slightly before serving.
Top with peanut butter, sliced banana, chopped chocolate and sea salt (and any other additional toppings).
Grab a spoon and enjoy!
NOTES
Sometimes I'll make 2 of these at the same time so I can have a quick breakfast another morning. I leave off the toppings though. So I reheat the potatoes and then top them with the peanut butter, bananas, and chocolate.
