Easy Snackin Rice Cakes

The possibilities are endless - rice cakes are just as versatile as toasts for layering on the flavor.

Working from home lets me snack more. I usually like to make my meals ahead of time and eat them as snacks throughout the day. However, having some more actual snacks at my disposal doesn't hurt either. If you were to raid my cupboards at any point, you'd be sure to always find a few snackin things.

Rice cakes

I hate to say that I'm not kidding about this. I buy them in bulk, and I honestly do not think there has ever been a time when I have not had rice cakes on hand.


Some people (and the old me) think rice cakes are “boring,” or that they are simply a “diet food.”  But they're not! These perfectly round, crunchy, salty treats are the perfect vehicle for any toppings that your heart desires.


I love topping my rice cakes with peanut butter and flaky salt in the evening for dessert, or with tomatoes and avocado for a snack mid-day or after work. I use them as a lighter version of Sweet Potato Toasts, which are a lunchtime meal for me.


There are literally thousands of creative ways to eat them for breakfast, lunch, dinner, or as a snack.


Rice cake toppings can be beautiful, flavorful and fun! And that’s what's so nice about them, you can get super creative when it comes to loading up the perfect, healthy rice cake.

The recipe I'm sharing is the perfect substitute for avocado toast. This doesn’t need much explanation – mix avocado chunks with salt and pepper, some garlic powder and sliced tomatoes.


Feel free to top with chili flakes for a kick! Totally optional.

EASY SNACKIN RICE CAKES

Serves 1

INGREDIENTS

  1. 2 rice cakes

TOPPINGS

  1. Avocado + salt/pepper + garlic powder + baby tomatoes

  2. Avocado + salt/pepper + garlic powder + chilli flakes

INSTRUCTIONS

  1. Mash avocado onto rice cake and add the rest of the toppings

Serve and enjoy!


NOTES

These don't keep for long (sorry meal prep lovers). The rice cakes will get super soggy after 15 minutes, so it's best to eat these right away.
