Call me weird, but I love all mini things, especially mini food. I think that eating tiny versions of food makes them taste better. I would rather 3 mini brownies over 1 large one. I even eat my Ben&Jerrys with a tiny spoon.

Pancake cereal is exactly what it sounds like. These super mini pancakes are cooked on a pan, then poured into a bowl. You can top them with things like butter and maple syrup or fruits and berries. I have seen some people adding milk, though, I found that it made the bottom ones soggy.
I know what you're thinking... it's another Tiktok whipped coffee disaster. Well I can tell you that thankfully this isn't; making it is pretty straightforward. And you won't get a forearm cramp from whipping it by hand for 20 minutes.
Just make your favourite pancake and put it into a squeeze bottle or a plastic bag and cut a small hole at the bottom. Then squeeze little dollops of the batter on a pan and cook.

When to flip a pancake
You'll want to flip the pancakes when the edges are set, but the centers are still a little bubbly. A spatula should slide underneath the pancake easily. If it wrinkles or gets sticky when you slide the spatula underneath the pancake, don’t flip it! It still needs more time to cook.

PANCAKE CEREAL
Serves 1
INGREDIENTS
Coconut oil
1/2 cup all purpose flour
2 Tbsp granulated sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/4 cup dairy free milk
2 Tbsp coconut oil, melted
1/2 tsp vanilla extract
1 egg
INSTRUCTIONS
Combine together the flour, sugar, baking powder, baking soda and salt in a large-sized bowl. Make a well in the centre and add the milk, melted coconut oil, vanilla and egg.
Whisk the wet ingredients together first before slowly folding them into the dry ingredients. Mix together until smooth.
Heat a skillet over medium heat. Pour pancake batter into a plastic bag and cut a tiny hole in one of the bottom corners.
Grease the skillet with some coconut oil, and pipe small drops onto the pan, leaving space in between so the batter doesn't run together.
Flip pancakes with a spatula once air bubbles start to appear. Brown the other side (about 1-2 minutes) and transfer to a bowl.
Add toppings of choice.
Serve and enjoy!
