Protein Cookie Dough Balls

Cookie dough for breakfast makes me happier than a kid with cake.

Being gluten-free, sometimes I get those cravings for baked goods like cookies, and sometimes I dream of cookies. These RAW cookie dough balls answered all my prayers.


They are a great make-ahead breakfast option. You can either make them the night before, or make a large batch for the week and throw them in the fridge until you're ready to eat. Or, I mean, you can eat them right away since they don't require any baking.


They're fast to grab and I don't have to put much thought into my mornings - which is perfect for those 6:30am gym days.

These would also make a great snack or dessert.

You get to add in whatever you want - chocolate chips, coco nibs, dried fruit...

Gluten and dairy free - also vegan - and have an amazing 26g of protein and only 8g of sugar. My sweet tooth is satisfied and I can continue to day dream about these until I have them for breakfast again tomorrow.

PROTEIN COOKIE DOUGH BALLS

Serves 1

INGREDIENTS

  1. 1/4 cup oat flour

  2. 1 scoop vanilla protein powder

  3. 2 tbsp nut butter (I use crunchy peanut butter)

  4. 2 tbsp add-ins (see below)

  5. 1/4 cup unsweetened vanilla almond milk (or other non-dairy milk)

EXTRAS/TOPPINGS

  1. Cacao nibs

  2. Coconut flakes

  3. Chocolate chips

  4. Nuts

INSTRUCTIONS

  1. In a bowl, mix together all the dry ingredients.

  2. Stir in the nut butter and the almond milk until it forms a thick dough.

  3. Using your hands, roll the dough to form small balls.

  4. You can either refrigerate them so they harden a little or you can eat them right away.

NOTES

You can add in 1tbsp of sweetener if you feel like you want it sweeter. My protein powder already has stevia so I don't add anything more. If you use a liquid like honey, you might need less milk.
