One bowl, 20 minutes, all for you.
Single serve dishes are not something that I make a lot of. BUT they are something that I would love to get into more.
My urge to cook with fancy equipment comes 50% from my love of cooking and 50% from the internet. Internet? Yes, the internet, where YouTube and Instagram have helped change how Millennials think about food; becoming more about the experience, and less about the art or taste.
Along with those changes, the classic tools of the trade have taken on a new role in the lives of aspiring cooks, much adrift from the sole functionality. Colorful cast-iron cookware by brands like Le Creuset, and the beautifully hued stand mixers by KitchenAid aren’t just culinary workhorses; they’ve become markers of stability and sophistication, coveted by young people for whom traditional indicators of both often remain out of reach.
To prove this: Google searches for both Dutch ovens and stand mixers have been growing steadily for 15 years.
I feel like one reason that young people, or really, people, obsess over food is that it lets people have social currency. It’s a way of showing off. And it's a weird flex... You are literally boasting that you have the luxury to be very choosy about something that a lot of people struggle to have. Like - I'm sorry but no one really NEEDS a $300 cast iron skillet. Even though I love mine...
But I'm all for anything that'll let you take a break from your screen. It’s like your zen time.
Speaking of fancy kitchen equipment, this recipe doesn’t require a mixer. It only takes about 5 minutes prep, a few tools, and a quick bake in the oven and you’ve got yourself (and I mean ONLY yourself) an unbelievably delicious batch of cookies!

SINGLE SERVE CAKE BITES
Serves 1
INGREDIENTS
1 tsp coconut oil, melted
1 Tbsp dairy free milk
1 Tbsp honey
1/4 cup flour
1/4 tsp baking powder
2 tsp sprinkles
INSTRUCTIONS
Preheat oven to 350 F and line a baking sheet with parchment paper.
In a small bowl, mix together oil, milk and honey.
In another small bowl, mix flour and baking powder.
Add the dry ingredients to the wet ingredients and stir to combine. Add sprinkles and combine.
Scoop into 4 cookies and place on baking sheet.
Bake for 15 mins.
Serve and enjoy!
