If there is one breakfast you NEED to try in your lifetime…
I went to visit my parents over the long weekend for a change - and omg I needed that. We live in a one bedroom condo, which means that there's been 2 of us who've been living and working in the same small space for the past 2 and a half months. We've been making it work, if we're both on conference calls, one of us (usually me) runs into the bedroom to take the call from the bed - which is less than ideal; but could be far worse.
I was SO nice to spend the long weekend in an actual HOUSE, with access to a backyard - and not having to wait for a free elevator every time we wanted to go outside.
In my opinion, long weekends call for a special breakfast. One of my favorite breakfast foods is french toast. To make this breakfast classic special, I gave it a big upgrade by adding a coating of chopped and caramelized pecans. Trust me, this Pecan Crusted French Toast is decadent and delicious and packs a ton of nutty, cinnamon flavor.
I could eat plates on plates of that delicious, egg-soaked, cinnamon-flavored bread all day long. But if you want the ultimate decadence, the pinnacle of breakfast deliciousness… this is it! You take the perfect french toast and fully coat it in cinnamon sugar and crunchy chopped pecans, top it with crispy bacon. And then you inhale every last crumb on your plate and smile in delight. I’m telling you, it’s THAT good.
In my opinion, the only way to make french toast is with extra thick, fat slices of bread. It needs to be nice and thick to soak up all that delicious egg mixture. Challah is my drug of choice.
The delicious and crunchy chopped pecans take center stage in this recipe and totally transform this breakfast staple into something truly worth waiting for. Just a personal preference, but I prefer to buy whole pecans and chop them myself so I can control the size of the pieces. I want them to be small enough to stick to the bread, but not pulverized into powder either.
You know what else makes this recipe so great? Other than those amazing pecans of course.
It's the cinnamon sugar.
With this recipe I add the cinnamon to the bowl of pecans, which gives them a coating and ensures each piece of bread will get the perfect amount of cinnamon.
The creme de la creme of this is french toast, is that, the first thing you do is cook the bacon on the pan. And then you cook the toast IN the bacon fat that's left on the pan.
Ohemgee you have NO idea how this adds a level up to your french toast game.
To top it all off, drizzle on the perfect amount of maple syrup, and you will be ready to dive into the most amazing, decadent breakfast you’ve ever had! The bread is still soft and eggy, , the bacon is crispy and cuts through the sweetness, and the pecans add amazing crunch and cinnamon flavor.
It's the perfect balance.

THE BEST PECAN CRUSTED FRENCH TOAST
Serves 1-2
INGREDIENTS
3 slices bacon
3 eggs
1 cup dairy free milk of choice
1 tsp vanilla
1/4 tsp salt
3 Tbsp sugar
2 tsp ground cinnamon
2 cups pecans, finely chopped
4 slices bread
Maple syrup, for serving
Fresh fruit, for serving
INSTRUCTIONS
In a large griddle or skillet, cook the bacon until done. Remove the bacon from the pan and place on paper towels to drain. Do not wash or wipe the skillet.
In a shallow dish, combine the eggs, milk, salt, and vanilla, and whisk until well combined.
Place the sugar, pecans and cinnamon in another shallow dish and stir until pecans are fully coated with cinnamon.
Reheat the skillet that you cooked the bacon in, and place over medium low heat. Dip the bread, one piece at a time, in the egg mixture on both sides. Allow excess to drip off then place bread in the dish of pecans.
Gently press the pecans onto both sides of the bread and place on the griddle. Cook the bread until browned, about 2 minutes per side. Repeat with remaining bread slices.
Serve topped with bacon, and drizzled with maple syrup or fruit if desired.
