Don't let this legume fool you - Healthy, no bake cookie dough recipe to satisfy that sweet tooth!
White sugar is seriously like a drug. Once you have a bit, you start craving it more and more and you really do go through a “withdrawl” from it. And what has a lot of sugar? Cookies.
So what do you do about that?
Cue the magic of chickpea cookie dough
I’d heard about making cookie dough with chickpeas for a while. But I wasn’t so sure about it...
Hold on
Don't get all judgy-McJudgy about the chickpeas, because honestly you can’t taste them. The cookie dough obviously isn’t as sweet as normal cookie dough, but you’re making this to be healthier. You’re making it to satisfy your sweet tooth without all the sugar - Right?
And as I've said many times before, it has all my favourites (ie. chocolate and peanut butter). What more do you need in life?
It’s sweet, healthy, takes 5 minutes to make in a food processor, filled with protein and fiber. But most importantly is SO delicious!
CHICKPEA COOKIE DOUGH
Serves 4
INGREDIENTS
1 can of chickpeas, drained and rinsed (about 2 cups)
1/2 cup peanut butter (I use crunchy)
2 tsp vanilla extract
2 1/2 tbsp honey/maple syrup
1/4 cup chocolate chips
EXTRAS/TOPPINGS
Cacao nibs
Coconut flakes
Nuts
INSTRUCTIONS
Drain and rinse chickpeas.
Add chickpeas, peanut butter, vanilla extract, and honey/maple syrup to a food processor. Blend until smooth and creamy.
Add chickpea cookie dough mixture to a small bowl. Fold in the chocolate chips.
Serve immediately.
NOTES
This can be stored in an airtight container in the fridge for 3-4 days.
