I have been up since 5:30am (I'm aware that it's the weekend) - but I went to bed at 8:30pm last night, so my body was ready to go. I honestly think there's so much value in keeping a regular schedule, no matter what day of the week it is.
It can seriously mess you up if you're waking up at 7:00am on week days and then you decide to sleep in until 10:00am or 11:00am on the weekend. Your body has an internal clock (your circadian rhythm), which plays a key role in regulating your sleep-wake cycle. This "clock" tells your body when it’s time to wake up in the morning and when it's time to start unwinding at the end of the day.
A lot of people don’t prioritize this, which can throw off the body’s internal clock.
The downsides of having an irregular sleep schedule?
Well it can cause irritability, drowsiness, mood swings, concentration and memory problems, headaches, and a decline in cognitive skills.
You might also suffer from restless sleep, which means that you never really enter the stages of the deep REM sleep that your brain and body need to restore themselves.
All to say - I try to keep mine as regular as possible, and I try my best to get up once I wake up naturally. This means that if I wake up at 5:30am on a Saturday, and I'm sitting here on the couch with my dog cuddled up against me as the sun is coming up - that it's perfectly okay with me.
Okay - now onto the bread.
Well friends, it does not get any better than this right here. Because Peanut Butter and Chocolate BANANA BREAD is happening - right now!
I'm going to say, this Flourless Peanut Butter Banana Bread is one of the MOST flavorful banana breads that I have ever made. Being that is even gluten & dairy-free, I am pretty sure this loaf is a total game changer. I'm also notorious for buying too many bananas... there's only so much that one person can eat on their own. So a lot of the time, they tend to go brown before I have a chance to eat them all. I used to freeze them to make smoothie bowls or protein shakes, but I've been off that kick for a while now.
This banana bread is seriously so moist. (ew sorry for using that word) You wouldn't even notice that this is dairy free (*cough cough* we don't need butter in everything).
But seriously, it pretty much combines all of my favorite foods into one perfectly delicious recipe.
It's great because it will hit the spot for a sweet breakfast (you can combine it with your favorite yogurt and granola). Or you can eat it as is for snack or even for dessert.
I dare you to try to eat just one slice...
CHOCOLATE CHIP PEANUT BUTTER BANANA BREAD (GLUTEN-FREE)
Serves 8-10
INGREDIENTS
3 large bananas (mashed)
1 egg
3/4 cup almond milk
1/2 cup melted coconut oil
1/3 cup peanut butter
2 Tbsp maple syrup
1 tsp vanilla extract
1/2 cup rolled oats
1 tsp baking powder
1 and 1/2 cups oat flour (gf all purpose or chickpea works too)
1/3 cup dark chocolate chunks or chips
EXTRAS/TOPPINGS
Extra chocolate chips
Coconut flakes
Peanut butter
INSTRUCTIONS
Preheat oven to 350 degrees and line a bread dish with parchment paper
In a large bowl, mix together mashed bananas, peanut butter, egg, milk, coconut oil, maple syrup and vanilla extract
Mix well then add in rolled oats, flour, baking powder and mix again
Fold in dark chocolate chips then pour into bread dish
Bake in oven for about 45 minutes
NOTES
This will stay good for a few days on counter or fridge and you can always freeze it for longer if you want.
