Pasta With Green Goddess Sauce

This Green Goddess Sauce Is the Best Thing Since Sliced Bread... I Mean Pasta.

What have we learned from the last few months? TO BE ADAPTABLE.


I feel like this is my new mantra. Seriously. And I am NOT usually someone who would say that adaptability is their strong suit.


BUT these past few months have pushed me wayyy outside my comfort zone. I might even be able to say that now I am sort-of adaptable. Especially when this comes to cooking. Oh, the woes of basil and canned chickpea shortages. The grocery stores are never going to be the same, are they?


And what is more adaptable than a pick-your-own-protein pasta dish with one simple green goddess dressing?

This is a herby and creamy green sauce that’s just as delicious as it is versatile: You can use any combo of herbs (basil, parsley, cilantro, spinach, kale). Any combo of creamy paste (almond butter, tahini, peanut butter). And your choice of acid (lemon juice, lime juice, rice vinegar, apple cider vinegar). You can even pick your own protein! You can be adventurous and use chicken, turkey, shrimp, tofu...


How easy is that!? TONS of subs to choose from. Use it on chicken breast or chickpeas, or veggies.

PASTA WITH GREEN GODDESS SAUCE

Serves 4

INGREDIENTS

  1. 1 lb fusilli

  2. 2 cups broccoli florets

  3. 1/2 cup fresh basil

  4. 1/4 cup nutritional yeast

  5. 3 Tbsp tahini

  6. 1 Tbsp lemon juice

  7. 1 Tbsp dijon mustard

  8. 2 cloves garlic

  9. 2 Tbsp extra-virgin olive oil

  10. Sea salt & black pepper to taste

  11. 1 package extra firm tofu

INSTRUCTIONS

  1. Slice the tofu into 1/2 inch cubes and place on a baking sheet lined with parchment paper. Broil on high until golden (it might take 5-10 mins depending on your oven - keep your eye on it).

  2. Meanwhile, in a large pot, cook the pasta according to directions. Add the broccoli to the boiling water as well.

  3. Reserving about 1/4 cup of the pasta water, drain once cooked (about 7-8 mins).

  4. Set aside about 1/2 cup of broccoli (you'll be folding them in after).

  5. To a high-powered blender, add the 1 1/2 cup of broccoli, basil, nutritional yeast, tahini, garlic, olive oil, lemon juice and salt and pepper. Blend to combine until it's creamy.

  6. Add the sauce, remaining 1/2 cup broccoli, pasta, and tofu back to the pot and stir to coat.

  7. To serve, divide among 4 bowls. Add sea salt and pepper to taste.

Serve and enjoy!
