We've all (or most of us) have been working at home for the last 4 months or so. This can be challenging sometimes, but I like to think that our millennial generation is quick to adapt.
Remote working isn’t always easy peasy lemon squeezy. For starters, the whole virtual meeting concept isn’t seamless. Meetings often result in interruptions, everyone talking over each other, and a whole bucket of IT issues.
Despite all this, working remotely, even just part time, can make employees much happier; reducing stress and having a better work-life balance.
I recognize that this isn't all of us, and even those of us who think we're pros, could always use a helping hand. Here are some steps that might help:
5 Steps to Keep Sane While Working Remotely
Keep your morning routine. When working from home, do all the things you'd do when you used to go into the office. Set your alarm, make some coffee, and wear nice(er) clothes.
Dedicate a work space. As tempting as it may be, DON'T coop yourself up in your room or lie on the couch. Keep your leisure spaces separate an dedicate a specific room or surface in your home to work.
Use technology to stay connected. At first, working from home might help you focus, but it also means that we miss out on the "water cooler" and "office chatter" and can make you feel cut off the larger operation happening in the office. Instant messaging and videoconferencing can help you check in with your coworkers and remind you how your work is contributing to the bigger picture.
Communicate expectations with your housemates. Make sure any roommates/parents/spouses/dogs (yes, sometimes even dogs) respect your space during work hours. Just because you're working from home doesn't mean you're hanging out at home - you're still working.
Prep your meals the night before. When you're at home, it can be oh so tempting to spend luxurious time making a really nice breakfast and lunch (I am guilty) - but DON'T. Cooking ahead of time lets you actually use your meal times to eat, and your work time to work.
Now let's get into THE most important part - the food. And ouff this week, I don't want to boast, but OHMYGOSH. This meal was GOOD. And I mean, like, really darn good.
Summer is not a time to eat heavy meals. Summer is the time to look for recipes that are light, can double as a palate cleanser, and have some spice, zing, and freshness. Something to add some pep to your step. This Spicy Peanut Cabbage Salad with Shredded Chicken does just that.
Chewy stewy meals just won't fly anymore, it's time to gravitate to a meal packed with fresh veggies that, you know, still have some crunch.

SPICY PEANUT CABBAGE SALAD WITH SHREDDED CHICKEN
Serves 4
INGREDIENTS
1 medium head of savoy cabbage, cut into 1-inch pieces
1 tsp sea salt
2 tsp grated lemon zest
3 Tbsp fresh lemon juice
2 Tbsp unseasoned rice vinegar
1 Tbsp gluten free soy sauce
½ tsp honey
1 Tbsp olive oil
4 celery stalks, thinly sliced diagonally, plus ½ cup celery leaves
2 scallions, thinly sliced diagonally
2 cups shredded cooked chicken
⅓ cup coarsely chopped salted, roasted peanuts
INSTRUCTIONS
Preheat the oven to 350F. Place chicken on a baking sheet, season with salt and pepper and cook until done (about 20 mins, depending on the size). Remove from oven and let cool slightly.
Using 2 forks, shred the chicken. Set aside.
Toss the cabbage and salt in a large bowl. Massage vigorously with your hands until the cabbage begins to release water and soften (about 2 mins). Don't skip this step, as it will season the leaves and help to tenderize them. Drain and set aside.
Mix the lemon zest, lemon juice, vinegar, soy sauce, and honey in a large bowl. Whisk in the oil.
Add the cabbage, celery and celery leaves, scallions, and chicken to bowl and toss to combine; seasoning with salt as needed.
Divide between bowls and top with peanuts.
Serve and enjoy!
NOTES
Dressing can be made the day before, just cover and chill. Shake before using.
