Spicy Chicken Meal Prep

Meal prep made easy.

Busy work days? No time to cook every night? Oh I might as well just eat some pizza or canned food...

Excuses, excuses, excuses... Don't fall into that trap.

Come to the rescue: this meal prep recipe. Easy, basic, ready in less than 30 minutes.

AND GUESS WHAT. Basic is also delicious. You also get to drop a dollop of hummus and/or avocado for sides. Who knew?! Basic is the new Next Level.


What you need to do is to cut the chicken into small pieces so it will cook though nice and easily.


No broccoli? Swap in some brussle sprouts instead.


I didn't do it this time, but this dish would also go great with a side of rice.


You can even add cumin, coriander, garlic powder, or any other type of spice you like. The options are limitless. I am sure you will really love this recipe. Enjoy!

SPICY CHICKEN MEAL PREP

Serves 4

INGREDIENTS

  1. 1 lb chicken breasts

  2. 1 onion, diced

  3. 3 cloves of garlic, minced

  4. 1 bunch of broccoli

  5. 2 medium sweet potatoes, chopped

  6. 2 tbsp avocado oil (or other high-heat cooking oil)

  7. 1 jalepeno pepper, cut into small pieces

  8. 1/2 tsp cayenne pepper

  9. 1 tsp smoked paprika

  10. Salt and pepper to taste

INSTRUCTIONS

  1. Dice the onion, mince the garlic, and cut the sweet potatoes into 1/2inch chunks, and the broccoli into florets.

  2. In a large skillet over medium heat, add the coconut oil and sauté the onion until fragrant, about 2mins. Add the garlic.

  3. Next, add the sweet potato and cook for about 5-7mins, until almost soft.

  4. While the sweet potatoes are cooking, cut the chicken into bite-sized pieces.

  5. Add the broccoli and chicken to the pan. Season with smoked paprika, salt and pepper, to coat. Cook until chicken is done, about 6-7mins.

  6. Adjust seasonings as needed.

  7. Serve and enjoy!

NOTES

You can sub the broccoli for brussle sprouts or asparagus if you'd rather - these are just the ones that were in season during the summer.

This dish would also go great with a side of rice.
