So, have you heard about this weird thing called sweet potato toast? (aka SPT)
Sometimes I feel like I should have named this blog "How to integrate sweet potato into every aspect of your life" because here's yet again, another sweet potato recipe.
So let's start with the elephant in the room - What Is Sweet Potato Toast?
Well, it's basically toast…but without the toast. Honestly, when I first saw these recipes on Pinterest, I was a bit skeptical. How can you call it toast without the actual toast? And is this even going to taste good?
But then of course, I became obsessed with any and everything sweet potato related (Chocolate Peanut Butter Breakfast Sweet Potatoes, Stuffed Sweet Potatoes With Tahini Dressing), so you can guess the rest...
Sweet potato recipes are also a great option if you’re gluten-free, want a little more fiber in your diet, or are tired of bread for toast. The biggest advantage is the added nutrition you get, including vitamin A and fiber!
Why is fiber good for you?
Well, to start, it helps to fill you up and keep your digestive system healthy. You get about four grams of fiber in one medium sweet potato. It also helps keep your blood sugar levels from peaking and crashing, which means you’ll maintain a better energy level throughout the day.
I also ensure that I get loads of healthy fats. The healthy fats from the avocado and hummus also help stabilize your blood sugar levels, which helps reduce cravings for sweets. And lastly, it provides energy that will keep you going all morning long - who wouldn’t want more of that??
When slicing the sweet potato, you can either use a big knife or mandolin slicer. I prefer using the mandolin because a. I'm a Type A, and I like the slices to be very uniform; and b. I find it easier and safer, and I have no desire to cut my finger off (although I have chopped off a few nails - see above).
Forgetting about that minor inconvenience... The great part is that you can top these with whatever you feel like.

Nut butter + cacao nibs + sliced banana
Fried egg + salt/pepper
Tahini + goji berries
Avocado + salt/pepper + cayenne pepper
Hummus + tuna + red onion
I've made this toast with both regular sweet potato and purple sweet potato - both are equally as yummy in my opinion. So just use what's available to you.
The other part of making sweet potato toast that might be a little tricky is ensuring that each slice gets toasted long enough to cook it through. This is especially true when using the toaster method (I prefer to make mine on the stove for this reason).
SWEET POTATO TOAST 5 WAYS
Serves 1
INGREDIENTS
1 large sweet potato
TOPPING COMBOS
Nut butter + cacao nibs + sliced banana
Fried egg + salt/pepper
Tahini + goji berries
Avocado + salt/pepper + cayenne pepper
Hummus + tuna + red onion
INSTRUCTIONS
Slice the sweet potato lengthwise into 1/4 inch thick slices. You can do this with a sharp knife or with a mandolin.
Place the sweet potato slices in a toaster on high for about 5 minutes or until cooked through. You may need to toast multiple times depending on the length of your toaster settings.
OR - Heat a skillet over medium heat and coat with coconut oil. Place the sweet potato and cover with a lid. Cook for about 4 mins, flip over and cook for an additional 2-3 mins (until soft)
Top with desired toppings and enjoy!
NOTES
Sweet potato toast slices can be stored in an airtight glass container for up to 1 week.
