Sweet Potato Tuna Toast

Quick and easy lunch (or snack) that'll help you use up that canned tuna you're hoarding.

Radical thought: Time to start using all that canned tuna you bought...


I’m thinking back to the first few weeks of shelter-in-place, when everyone ran out in desperation and bought every canned and frozen item in sight. Canned beans and soups, frozen pizzas, pastas - and even, yes - canned tuna.


I’m not a fan of certain canned foods (I see you baked beans), but some, like tuna, I really enjoy. And you honestly don’t really need to eat canned things until the fresh things are unavailable. But there is plenty of fresh produce and meat.

So if you do find yourself with tons of canned foods - one being canned tuna, and you’re wondering what to do with it, here ya go!

So let's start with the elephant in the room - What Is Sweet Potato Toast?

Well, it's basically toast…but without the toast. A while ago I shared my Sweet Potato Toast 5 Ways, but this is my go-to meal for lunch every weekend.


Yes.


Every dam weekend.


I am a creature of habit, and I like it like that.


There are lots of ways to make tuna salad, or a tuna sandwich, or tuna toast. But this is how I make mine:

  1. Slice sweet potato thinly

  2. Heat on a cast iron skillet, cover with a lid and flip after 2 minutes. Cook until tender

  3. Top with mashed avocado, hot sauce and tuna


And BAM. That's it. You're done!

SWEET POTATO TUNA TOAST

Serves 1

INGREDIENTS

  1. 1 large sweet potato

TOPPINGS

  1. 1/2 avocado, mashed

  2. Tuna

  3. Hot sauce of choice

INSTRUCTIONS

  1. Slice the sweet potato lengthwise into 1/4 inch thick slices. You can do this with a sharp knife or with a mandolin.

  2. Place the sweet potato slices in a toaster on high for about 5 minutes or until cooked through. You may need to toast multiple times depending on the length of your toaster settings.

  3. OR - Heat a skillet over medium heat and coat with coconut oil. Place the sweet potato and cover with a lid. Cook for about 4 mins, flip over and cook for an additional 2-3 mins (until soft).

  4. Top with toppings.

Serve and enjoy!
