Friends, hi! Welcome to summer this strange weather that feels a lot like fall right now. I hope you’re all staying safe in this crazy time, and taking the time you need to recharge and focus on yourself.
Mind boggling to me that it is already half way through the year. These months are flying by.
But I’ve still got you covered in the recipe department. Eating this Peanut Butter Banana Bread is the BEST way to spend your lazy weekends, and is by far one of my favorite recipes to date.
I am going to be obscenely obnoxious with the amount of pictures of this bread because I am just so proud. And I do NOT feel one bit guilty about it.

We visited my parents over in Montreal this past weekend. They always have TONS of bananas sitting around, which inspired me (I swear it was not the quarantine banana bread train). For this one, I decided to make a classic recipe with a slight twist. I’m usually pretty careful with measuring out the ingredients, but I didn’t even pay attention to the ratios or bake time. BUT some of the best things happen by accident. I let it cool and sliced it, and I was shook.
The dough is just right, not to dry but not uber wet either. The peanut butter and chocolate chip puddles on top are just the comforting hug you need.
It is also refined-sugar free so you won’t be in a sugar coma. Not like there is anything totally wrong with that but like, ya gotta find the healthier options ya know?!
The Dreamiest Peanut Butter Banana Bread is, of course, dairy-free; but you wouldn’t even guess.

THE DREAMIEST PEANUT BUTTER BANANA BREAD
Serves 8
INGREDIENTS
2 large bananas, mashed
1 egg
1/3 cup creamy peanut butter
2 Tbsp coconut oil, melted and cooled
1 tsp vanilla extract
1.5 cups flour
1 tsp baking powder
Chocolate chips, for topping
INSTRUCTIONS
Preheat oven to 350 degrees and line a bread pan with parchment paper.
In a large bowl, mix together the banana, eggs, nut butter, coconut oil and vanilla extract until smooth.
Add in the flour and baking powder and mix well so there are no clumps (feel free to go wild and add in nuts here if you want).
Add the bread batter to the pan and spread evenly spread.
Place some dollops of peanut butter on top, and sprinkle on some chocolate chips.
Bake in oven for about 45 minutes or until ready.
Let cool in the pan on a wire rack for 10 mins.
Serve and enjoy!
NOTES
Will stay good for a few days on counter or fridge and you can also freeze for longer.
